2 INGREDIENT ICE CREAM

This tastes so good it's going to make you ditch the supermarket ice cream!

Ingredients:
600ml double cream
1 can of condensed milk
Whisk the double cream until it's the consistency of clotted cream.
Fold in the condensed milk. Then fold in your favourite toppings. I've been making this for years and I've previously made it with peanut butter & maple syrup, lemon curd and my favourite pistachio cream (Sainsburys is my favourite go to for a jar of that)!
This time I added 500g of chopped and de-stoned cherries to a pan with the zest and juice of 1 lemon, 50g caster sugar and 1 tsp corn flour.
Cook in a pan for about 15 minutes until bubbling, reduced and thickened. Make sure you leave it to cool completely before folding into your base mix. I also added 1 tsp of almond extract as a nod to a Bakewell tart but you could just add vanilla extract to keep it plain.
Then freeze for at least 6 hours or ideally overnight.
This is such a great one to make with kids too.
